A traditional English-made Aga stove was one of Svetlana’s priorities and she chose a gas-fired, four-oven model. An Aga is a cast-iron, heat-storage cooker that holds the temperatures of the ovens and cooking plates to set levels. Control dials aren’t needed because the unit is always on and ready to cook. Heat is transferred and released steadily, resulting in a gentle cooking process that preserves a food’s moisture, flavor, and texture.
Svetlana also wanted a hood for top-of-the stove cooking, and in a grand gesture that gives the whole kitchen style and drama, she decided to have the entire stove wall tiled from the floor to the ceiling in a dark green-and-cream diamond pattern.
