- 5 cups good-quality purchased or fresh squeezed orange juice
- 1/2 cup vodka
- 1/2 cup water
- 2 cups vanilla lowfat yogurt
- 1/2 cup cream of coconut
In 8-cup glass measure combine orange juice, vodka, and water.
Pour half of mixture into 25 popsicle molds or 16 (5-ounce) paper cups. Cover cups with foil. Cut slit in foil over each cup and insert wooden stick into each slit, pushing stick down into orange juice layer in cups. Freeze 3 hours or until firm.
In medium bowl combine yogurt and cream of coconut. Remove lids or foil. Spoon yogurt mixture evenly over orange juice mixture. Re-cover with lids or foil and freeze 3 hours more or until firm.
Remove lids or foil, divide remaining orange juice mixture among molds or cups. Re-cover with lids or foil; freeze 3 hours more or until firm. To serve, remove pops from molds or remove foil and tear away paper cups. Popsicles may be frozen up to one month. Makes 25 popsicles (in molds) or 16 popsicles (in paper cups).
