Avocado and Grapefruit Salad

  • 8 cups torn mixed salad greens or fresh baby spinach
  • 2 grapefruits, peeled and sectioned
  • 1 avocado, pitted, peeled, and sliced
  • 2 tablespoons raspberry vinegar
  • 2 tablespoons avocado oil or olive oil
  • 1 tablespoon water
  • 1 teaspoon sugar
  • 1/8 teaspoon salt

On 8 individual salad plates, arrange mixed salad greens and/or spinach, grapefruit sections, and avocado slices.

For dressing, in small bowl, whisk together raspberry vinegar, avocado or olive oil, water, sugar, and salt. Drizzle over salad. Makes 8 servings.
